I do regular tastings with my learners – I follow the same training as I would for a beer taste panel in a brewery. So I spike non-alcohol beer with different flavours. This week we did ‘Iso-valeric Acid’ – a flavour typical of aged hops. I describe it as ‘sweaty socks, cheesy, herby’.
One piped up ‘How do you know what sweaty socks tastes like ?’
